A fabulous Danish traditional treat is called #flødeboller: They are basically chocolate covered cream puffs. The traditional version is made with a light foam based on egg white and sugar and coated in dark chocolate. The luxury version often has a thin base of marzipan, while the supermarket version makes do with a crispy waffle bottom.
Summerbird (@summerbird_chocolaterie) is one of the most interesting chocolateries in Denmark. The company has created less traditional versions of the old classic since 2001, and is now on the market with a summer edition created by the talented chef and TV-personality Thomas Herman.
The summer edition has a base of oozing, soft marzipan, strawberry filling and a chocolate coating made from an organic 36% white Amber chocolate that will melt in your mouth. The masterpiece is topped off with granulated strawberry, which gives a fresh contrast to the sweet experience.
The amber chocolate coating bears subtle notes of delicately caramelized aromas that brings the South African fruit marula to mind. The texture of the filling is smooth and sweet, while the hint of granulated strawberries intensifies the fresh flavor of summer. The structure and texture is refined but does not have as crispy a coating as you might have hoped for. The tasting experience is balanced but on the sweet side compared to e.g. the passion and licorice cream buns, which you might find are slightly more bold and sexy creations.
